ENCHILADA'S TONIGHT

Tonight I made Enchilada's.  Took Ground Beef out of the Freezer, about 1-1/2 Pounds.  After Frying, I added Enchilada Sauce, and Tomatoe Paste.  In the meantime,  I Cut Up about 3 Onions, Open 2 Cans of Green Chili's, and Grate Up Cheese.  At least 2 Cups.  Then I take my Whole Wheat Flour Tortilla's and roll up at least 2 Tablespoons of Onion Mixture into Whole Wheat Tortillas.  Place them in a Sprayed Pyrex Dish.  When that's done, I place the Pyrex Dish in a 350 Degree Oven for about 45 Minutes to 1 Hour.  When baking has finished, I add at least 2 Cups More of Grated Mild Cheddar Cheese on Top of Enchilada's another 5 Minutes, then take out of Oven To Rest.  While the Enchilada's are cooking, I make Mexican Rice, and Warm Up Refried Beans, and make a Quick Salad consisting of Lettuce and Tomatoes.  Sprinkle with Lemon Juice.  My Three Sons Were Very Happy.  Sadly, they wanted Something Sweet To Eat Afterwards, And, I had nothing prepared tonight.  Maybe Tomorrow.
